Spring has arrived with April and why not celebrate its gorgeous flowers blooming, birds chirping, and the sun shining with the delight of Jambalaya. Jambalaya, a delicious dish originating from New Orleans, is marked by the exquisite mixture of rice, vegetables and meat cooked with stock.
First, start by sautéing the smoked sausage and chicken with the olive oil. Then, when the sausage and chicken are cooked, remove them from the pan and add the garlic, peppers, celery, onions and Cajun spice. As soon as the vegetables are caramelizing, add the rice, making sure it is mixed well. Afterwards, add the stock, tomatoes, shrimp, chicken, sausage and all spices. Now, bring all to a boil, then turn the heat low and cook until the rice is done, about fifteen to twenty minutes. Keep checking the taste, add seasoning accordingly.
Now to enjoy this uplifting dish, a glass of chilled sparkling white wine is perfect to bring out the infusion of these delicious southern ingredients.
