Mid summer… taking in the sun’s glow, the flaming colors of the dancing flowers and the perfect weather, we remain delighted with the blessing of the season. In the summer we go out to take in more of nature and reflect about everything around us; we can completely indulge ourselves into this glorious experience by awaking our senses with a Sizzling Mahi Mahi and Raspberry Mango Salsa and Onion Rings.

            Berries and Mangoes, being in season and bass readily available in the summer, facilitates the preparation of our tasty meal. Let us begin our journey by dredging the Mahi Mahi lightly with the flour and seasoning it with salt and pepper. Then, we sear it on the sauté pan and place it in the oven at 350 degrees for 20 minutes. Meanwhile, we start preparing the batter for the onions by mixing the flour, baking powder, salt, and pepper in a bowl. Then we proceed to combine the eggs and beer in a separate bowl. Finally, we add the egg/beer mixture to the dry mixture; combine until a smooth batter is created. Now we dredge the onion rings in flour and dip it in the batter just created. We drop the rings in the fryer about 375 degrees, allowing them to float. When the onion rings achieve a golden color we remove them and drain them on paper towels. By this time the fish is ready and we take it out from the oven, and remove it from the pan. Now to prepare our Raspberry Mango Salsa we lightly sauté the white onions in the fish pan. When they become a little golden we add the tomatoes, red onions, jalapenos, white wine, orange juice, honey, ginger powder, all spice and we let that sweat for a few minutes. Once these strong ingredients release their aroma, we then add the mangoes. To finish our journey we then add the raspberries and remove the pan from the fire, adding the cilantro to seal our delicious summer dish. We serve the fish, drizzle the salsa on top with some of the main ingredients and the onion rings on the side.

            We are ready to submerge ourselves into the summer with the Sizzling Mahi Mahi

RECIPE - FISH PREPARATION

RASBERRY MANGO SALSA

4 FILLET STRIPPES BASS

SALT/PEPPER/FLOUR

VEGETABLE OIL AS NEEDED

 

ONION RING BATTER

 1 TEA SP BAKING POWDER

1 TEA SP SALT

1/8 TEA SP WHITE PEPPER

½ WHOLE EGG

5 OZ FLOUR

2 POUNDS ONIONS WHOLE RINGS ½ IN WIDE

1 CUP BEER

 

                                                           

                       



1 MANGO

½ BOX OF RASBERRIES

½ TOMATOE CONCASSSE
½ RED ONION FINELY DICED

½ JALAPENO FINELY DICED

CILANTRO AS NEEDED

½ TEA SPOON GINGER POWDER

½ TEA SPOON ALL SPICE

½ CUP ORANGE JUICE

½ CUP WHITE WINE

½ TABLE SP HONEY

¼ WHITE ONIONS
