In the middle of the summer, we enjoy the comfort of the outdoors and the time to relax, and we think to ourselves what kind of meal will satisfy our hunger yet makes us feel just right. Well, there is nothing more soothing than a cold soup on a hot summer day... Gazpacho.
Gazpacho is a great meal because it is filled with all the refreshing ingredients like cucumber, tomatoes and lemon, which are also healthy. Originating from Andalusia, Spain; it is a creation not only known for its ability to cool on a summer day but is known for its easy preparation and uncooked vegetables.
Let us start by cutting the tomatoes, onions, peppers, cucumbers, and garlic medium dice and then adding them all in a blender or food processor. Afterwards, we add the olive oil, lemon juice, red wine vinegar, cayenne pepper, and tomato juice. Then, we add the stock, adjusting the consistency not all at once, we want it not to thick but not watery. Then, we stir in vegetable garnish (small dice veggies) and salt and pepper. Finally, serve on a chilled bowl with a garnish of fresh basil.
